Q. WHAT IS WAGYU AND WHERE ARE THE WAGYU BRED

Wagyu literally means Japanese cow ("Wa" = Japan, "gyu" = cow). Wagyu beef is high in intramuscular fat (marbling) that is HDL (high density lipoprotein)

Our Wagyu is Full Blood Japanese Wagyu meaning it is not crossed with other breeds

We have a Full Blood Japanese Wagyu Bull (Bruno) who is joined with our Full Blood Japanese Wagyu cows to breed our own stock.

Occasionally we work with our Wagyu partner in Mudgee (also breeding the same Full Blood Japanese wagyu) to source cattle for fattening at our farm. This ensures we can continue to provide consistency and quality product.

Q. IS WAGYU BEEF GOOD FOR YOU

Wagyu beef is high in intramuscular fat (marbling) that is HDL (high density lipoprotein)

What are HDL and LDL?

HDL and LDL are two types of lipoproteins. They are a combination of fat (lipid) and protein. The lipids need to be attached to the proteins so they can move through the blood. HDL and LDL have different purposes:

HDL stands for high-density lipoproteins. It is sometimes called the "good" cholesterol because it carries cholesterol from other parts of your body back to your liver. Your liver then removes the cholesterol from your body.

LDL stands for low-density lipoproteins. It is sometimes called the "bad" cholesterol because a high LDL level leads to a build up of cholesterol in your arteries.

Q. HOW CAN I ORDER THE WAGYU?

Please contact us and we will discuss your needs and the timing.  

We will then ask for a $200 deposit before we send the animal for processing. 

If ordering a quarter or half carcass, we will need to sell the rest of the carcass before processing your order.

For the 25kg boxes (approx weight), we need to fill approx. 12 orders (being one Wagyu).

Q. ARE THERE ANY ADDITIONAL COSTS, HOW MUCH IS DELIVERY AND WHAT IS THE MEAT DELIVERED IN?

Our animals go straight from our farm to be processed at our selected abattoir and then on to Simons Gourmet butcher in Bowral for butchering and packaging. 

All fees associated with this process are included in the per kilo price. 

We deliver throughout the Southern Highlands and selected areas around Sydney Metropolitan.

Deliveries to Sydney Metro would incur a small fee dependent on purchase and location.

Our meat is all cryovaced (except sausages) and packed fresh (not frozen) into large foam boxes with cooler bricks included to keep cool. 

We are happy to discuss and assist delivery options.

Q. IS MEAT AVAILABLE ALL THE TIME 

No. All meat is processed on an as ordered basis, subject to availability.

Q. DO YOU KNOW HOW MUCH A WHOLE, HALF OR QUARTER OF BEEF OR LAMB WEIGHS BEFORE I ORDER IT AND HOW MUCH IT WILL COST?

No, unfortunately we can’t say for certain until we process your order and the carcass is delivered to the butcher and then butchered (a % of the carcass weight is lost in the butchering process). 

But to give you a rough idea…

Our Wagyu

We aim for around 700kg live weight – this weight maximises marbling and taste. This becomes approximately 420kg dressed weight (what leaves the abattoir and goes to the butcher). And this in turn becomes around 350kg of packaged meat after the butcher has cut it up.

So using the above example, a whole Wagyu butchered and packaged weighing 350kg @ $30kg will cost approximately $10,500

A half Wagyu weighing 175kg @ $34kg will cost approximately $5,950

A Quarter Wagyu weighing 88kg @ $38kg will cost approximately $3,344

Our 25kg mixed boxes are also approximate in weight as its difficult to include all cuts and hit an exact 25kg weight. 25kg box @ $40kg will cost $1,000

Our Lamb

A whole lamb carcass butchered and packaged will weigh around 18kg @ $20 per kg will cost approximately $360.

A half lamb weighs around 9kg @ $25kg will cost approximately $225

 

There is NO GST on fresh meat

 

Q. WHAT TYPE OF CUTS WILL I GET AND HOW IS IT PACKAGED?

Our wagyu

If you order a whole or half Wagyu, you will get to choose what cuts you want. We are happy to discuss how this process works in conjunction with the butcher.

A quarter Wagyu will consist of a range of cuts as decided by the butcher keeping in mind that both quarters will be butchered at the same time and then shared ie you wont just get the front quarter or hind quarter!.

In the 25kg boxes (approx. weight), you will receive a bit of everything

All our meat (with the exception of Sausages) is Cryovaced by the butcher which ensures freshness is retained and enables longer freezing times.  

Sausages come packaged on a tray with gladwrap – this stops them splitting open!

The different cuts of beef include (but not limited to) are:

  • Corned silverside

  • Topside strips

  • Round steaks

  • Gravy beef diced

  • Osso bucco

  • T-bones

  • Rump steaks

  • Fillet whole roast

  • Chuck diced

  • Blade stakes

  • Oyster blade steaks

  • Spare ribs

  • Scotch fillet steaks

  • Sausages (a range of tasty gourmet flavours available on Full or Half Wagyu orders)

  • Mince

Just to be clear with the Wagyu - whatever you buy will not just consist of boxes of steaks!!.... 

Our Lamb

In a whole lamb the cuts include:

  • 2 x legs

  • 2 x shoulders or forequarter chops

  • 2 x shanks

  • Shortloin

  • Rack or cutlets

  • Mince 

 

Q. CAN I CUSTOMISE HOW THE WAGYU CUTS WILL BE BUTCHERED?

For whole and half Wagyu purchases you can choose how you want your meat to be butchered (diced, roasts, corned, steaks, snags etc.). 

Unfortunately we can’t customise the cuts for quarter beef orders as the whole animal gets equally divided 4 ways. 

The 25kg boxes include a fair distribution of all cuts.

 

Q. CAN I BUY JUST ONE CUT OF MEAT, FOR EXAMPLE A WHOLE RUMP OR JUST SAUSAGES?

No, sorry we only sell our Wagyu in mixed 25kg boxes, by the quarter, half or whole body 

Occasionally we may process a Wagyu specifically for Winter or Summer eg last summer we offered our customers our unique SSSS packs -  “Sensational Sizzling Summer Sausages” consisting of a range of gourmet flavours in 5kg packs.

 

Q. HOW MUCH FREEZER SPACE WILL I NEED FOR A HALF OR WHOLE WAGYU ?

You will need freezer space and the larger the order, the more space you will need!. 

And it all depends on how much you are keeping for yourself vs sharing with family & friends.

Q. HOW LONG DOES IT TAKE BETWEEN ORDERING AND DELIVERY?

It can take a little while depending on availability and orders. But we will work with you to manage expectations.

For example, if you order a whole Wagyu we can arrange for the next available animal.

If you order a half we need to get an order for the other half. And a quarter, we need 4 orders. And the 25kg boxes around 12 orders.

Q. ARE THE CATTLE GRAIN FED OR FATTENED WITH OTHER CHEMICAL FEED?

No, our Wagyu are fed only on our lush green pastures. May take a bit longer to reach the desired weight but we love the idea we can provide only natural grass-fed beef. 

At times during Summer and Winter, we will feed our wagyu Silage Hay which has been cut and baled on our farm or natural grain – it’s our way of ensuring the Wagyu have the best feed all year around regardless of the season.

Our Wagyu do NOT go to feedlots - they go straight from our paddocks to be processed and then delivered direct to you.

  

Q. WHERE IS YOUR FARM LOCATED?

Our farm is located in High Range, Southern Highlands. Roughly 1.5 hours from Sydney, 10 minutes to Berrima and Mittagong and 20 minutes to Bowral.
